San Fulgencio





  • 1.5 liters of milk
  • 4 tablespoons of flour
  • 2 eggs
  • 8 tablespoons of sugar
  • 1 cinnamon stick
  • lemon rind
  • 0.5 liters of olive oil
  1. Heat the milk with the lemon rind and cinnamon until it boils.
  2. Remove it from the heat and add the sugar.
  3. Beat the eggs and add the flour. A creamy dough should remain.
  4. Fry the oil with the lemon rind.
  5. When the oil is toasted, remove the lemon peel and with a soup spoon, pour the circles into the oil.
  6. Fry it for a few moments until the pieces of dough are golden brown on both sides.
  7. Pour them into a bowl and add the milk to which the lemon rind has previously been removed.
  8. Sprinkle ground cinnamon on top
